Just checking in for my next trip and I see that VHI now offer skiing insurance.
http://www.vhi.ie/info/MainServlet?action=travelProductSelect

Here is a list of the prices as it stands right now :

Individual €49
Couple €69
Family €95

Prices also increase when you are over 65, but you can save some money if know you are only going to be going skiing in Europe as they have 2 seperate rates.

I did a bit of digging and I noticed 3 things

One of the catches is that you have to be a VHI member to take advantage of this "All members on a MultiTrip policy must hold relevant Vhi Healthcare Hospital Insurance ".
Also it's worth noticing that they have an excess limit of €85, meaning you have to pay the first €85 of every claim.
on the webpage they don't mention skiing equipment, so I don't know what would happen to lost or stolen property/ski equipment.

Good spot there guidon ! Looking at the prices, I still think Essential Travel (http://www.skiing.ie/discount-insurance/) are the cheapest. BUPA also offers something, but their policy is also restrictive, for example you are not covered if you journey doesn't start and end in Ireland. So if you took a few days to go somewhere else before or after you may not be covered.

With all these insurance plans you should read the fine print and look at the list of exclusions, property cover, excess level and number of days covered.

personally I don't see the benefit in getting insurance, the E111 card will cover you for emergency stuff.
