Been there twice Cathy. Didn't stay in Olympiades but they could hardly be better placed. They are right in the slope, true ski in ski out. If it is icy in the morning just watch yourself entering the piste as it can get very icy, right at the Olympiades if snow is scarce. In 2007, when snow was very poor, I lost count of the number of falls I saw at that point. But last year, it was absolutely fine.
The ski school is quite good. Depends on who you get, as I found somewhat of a difference between the instructors that various of our groups had. In my case I had top class guys both times but my wife's instructor was not the best last time out, although the previous time she had her favourite instructor ever (from about 6 or 7 weeks school to date).
We found a few good places for food. La Copa was good. If you walk out the front of Olympiades and down the hill, you will come to a hairpin corner. Opposite is the Milwalkee bar, quite a good place, and just around the corner on the left is La Copa.
There are also a couple of nice places across the opposite of the piste form Olympiades, near La Frontera Blanca apartments. I can remember the names but you will see them. One had a lunch time special menu for €7 which we availed of a few times.
When you arrive in Pas, the bus can't get up through the town so you will have to walk and they bring your suitcase in a minivan. It will be waiting on the footpath outside your accommodation. I didn't like this arrangement so last time I wheeled my own case along. Be warned, its a steep walk up to the Olympiades from the bus.
As for the skiing, the Grau Roig side is a little nicer, IMO, but Pas is good too if they have good snow.
I won't be far from you in March as I'm flying to Soldeu the same day as you. Here's to a week of snow before we go and a week of sunshine when we are there!
The bus transfer is long enough. Expect about 3 hours 20 with a stop after about 1:50 at a place where all the busses stop. Its a panini and coffee type of place . They do chips at an outside stall but they are usually undercooked and greasy so I recommend you head inside. The queue for the ladies loo is often a mile long (well, not quite a mile

). You might want to send hubby in for the coffee while you queue as you don't want to miss the bus.
